Ginza Group has promoted Daniel Ayres to operations manager.
Ayres worked at assistant restaurant manager level at both 101 restaurant and the resort’s signature restaurant Stay by Yannick Alleno. He was responsible for team development and training, as well as overseeing restaurant operations with his senior management team. Ayres then made a transition out of hotel resorts to stand alone restaurants where he took on his next challenge at La Serre Bistro & Boulangerie, joining the established venue in the same role where he played an important role in the restaurant’s opening.
In 2015, Ayres went to join Jean-Georges Dubai as part of the pre-opening team and took on the role of assistant general manager. During his tenure at Jean-Georges Dubai, he was promoted to general manager within 16 months of taking his initial role and his input during the venue’s initial opening period was imperative in developing Jean-Georges Dubai into a prominent F&B brand in its competitive Jumeirah location.
Having contributed to overseeing all operational management, including improved productivity, business development and administration of the Jean-Georges Dubai, Ayres started assisting in other Ginza outlets overlooking restaurant operations. The Ginza Restaurants portfolio also includes Serafina, Mayta, Simply Italian, Abyat and Real Madrid Café with some new international brands soon to be launched.
