Fairmont the Palm Dubai makes two new hires in F&B division

Fairmont The Palm, Dubai has made two new appointments within its team— a new director of food and beverage, Alain Gobeil and a new executive chef, Trevor MacLeod.

Gobeil  will be responsible for the strategic direction and overseeing operations for the resorts food and beverage outlets, whilst MacLeod will focus on the culinary division and managing its team of over 120 talented chefs.

A Canadian national, Gobeil joined Fairmont The Palm in May 2016 as executive chef and has almost two decades’ of international experience from across three continents. His food and beverage experience both in and out of the kitchen have developed from working within five star ski resorts in France and Canada, to luxury resorts and hotels within the Cayman Islands, Egypt, UK and the UAE. Gobeil holds a certificate in Hospitality Management and has worked with other Fairmont sister properties in Canada, Dubai and Abu Dhabi bringing a wealth of knowledge to his new role as food and beverage director.

Trevor MacLeod who is also a Canadian national, joined Fairmont The Palm’s culinary team in September 2016 as a former executive sous chef. During this period, he worked in unison with Gobeil in creating and developing an exceptional culinary team. Trevor brings over ten years’ experience to his new role as executive chef, having worked within multiple independent restaurants and leading hotel brands across the UAE, Canada, China and the Philippines, including Fairmont sister properties in Jasper and Banff, Vancouver, Abu Dhabi and China.

Mark Sawkins, general manager of Fairmont The Palm commented; “Alain and Trevor have shown great leadership, creativity and have positively influenced the culinary offering since joining the resort in 2016. It is natural for them to grow and develop their skills in these new roles. I am certain that their passion for food and beverage will bring new and exciting culinary developments for the resort into 2018 and beyond.”

They will work together to enhance the resorts food and beverage offering, with the focus on four new restaurant and bar openings set for 2018. The new outlets will bring a total of eleven restaurant and bars to the resort.
